Rice and Broccoli Casserole

I keep this recipe for weeknights when I want a quick and easy meal that I know my kids will eat. I love the rich taste of the ranch dressing mix and the cheese mixed in. It’s a great┬ácasserole for leftovers as well. I like to make a double batch so I have enough leftovers to take to work or I┬ámake an extra casserole to freeze for another day’s supper.

Rice & Broccoli Casserole

A rich and flavorful casserole that is easy to make, a sure favorite for your family.


  • 3 cups Brown Rice (Cooked)
  • 1 head Broccoli (cut into bite sized florets and steamed)
  • 1/2 cup Frozen Peas
  • 1 cup Chicken Broth (or 1 cup boiling water with 1 Chicken Boullion cube)
  • 12oz Colby Jack Cheese (shredded)
  • 1/2 packet Dry Ranch Dressing
  • 1 tube Ritz Crackers (Crushed)


1. Preheat over to 350 degrees. Combine cooked rice, steamed broccoli, frozen peas, Ranch Dressing, Chicken Broth, and 8 ounces shredded cheese in a large bowl. Stir until combined.
2. Spoon into ungreased 8x8 casserole dish
3. Sprinkle remaining 4 ounces cheese over top, then crushed Ritz crackers, cover
4. Bake for 30 - 40 minutes or until Ritz crackers have started to brown slightly


Make sure to include the ranch dressing, that is what makes this casserole pop!
